method

  1. wash a tall glass jar in very hot water; pack the cucumbers tight, with garlic and dill tucked between.
  2. dissolve the salt in the boiled water; pour over the cucumbers until they are submerged; weight them down with a smaller jar.
  3. cover loosely with a cloth; leave on the counter for a week; refrigerate when they taste of themselves only more so.

a small act of september that you eat in february.

eaten beside last night's supper, or with a piece of bread and cheese; the jar lives on the cool shelf of the pantry and is visited at eight.
