a pickle
one jar · ten minutes & a week · made in september
ingredients
- six small firm cucumbers, ridged ones if possible
- a head of dill, including the seed
- three cloves of garlic, peeled
- black peppercorns, a teaspoon
- 30g coarse salt
- 500ml water, brought to a boil and cooled
method
- wash a tall glass jar in very hot water; pack the cucumbers tight, with garlic and dill tucked between.
- dissolve the salt in the boiled water; pour over the cucumbers until they are submerged; weight them down with a smaller jar.
- cover loosely with a cloth; leave on the counter for a week; refrigerate when they taste of themselves only more so.
a small act of september that you eat in february.

lives on the cool shelf of the pantry and is
visited at eight.
